Valpolicella DOC Santambrogio

From the vinification of the best grapes grown on the hills of the Valpolicella area comes this wine with a dry, harmonious flavour and garnet red colour.
Grape Variety
Corvina, Rondinella, Molinara, old indigenous vines and other recommended varieties to finish.
Vineyard (geographical location and characteristics)
The vineyards are situated in the north-western part of the hilly arc of the province of Verona and have an average age of 30 years. The soils are red and brown on marls of Cretaceous age and compact red soils on Eocene limestone.
Vinification
On arrival at the winery, the grapes are destemmed and crushed. The must and marc are then fermented in special thermo-controlled tanks with temperatures of around 20 °C and a cap-friendly breaking device, until complete extraction of the coloured fraction and aromas in the flower must alone without the need for pressing.
Valpolicella & Cuisine
Excellent with tasty hors d’oeuvres, such as soppressa veneta, or first courses based on egg pasta and beef ragout. Also goes well with white and red meats and light game.
