Grape Variety
Garganega, Chardonnay and other indigenous vines to complete.
Vineyard (geographical location and characteristics)
The vineyards are located in the hilly area of the province of Verona. The age varies from 7 years of Chardonnay to the average 30 years of Garganega to over 50 years of the old vines. The hilly, morainic soil is of a gravelly-sandy limestone nature, well exposed to the action of the sun’s rays.
Vinification
The carefully selected grapes are harvested by hand when ripe at two different times: at the end of August for the Chardonnays and in mid-October for the others. The grapes are fermented according to the ideal ripening period and then blended at the first racking after alcoholic fermentation. Controlled fermentation temperatures range from 16 to 19 °C. This is followed by a short stay in steel and bottle ageing.
