Red Il Groto Veronese IGT

Years of research and trials to find the most suitable grape varieties have enabled us to obtain this great, well-structured and very harmonious red wine with an intense and complex bouquet of small red and black berries, spices and dried grass. Hints of black fruit jam and ginger prevail in the mouth; its tannicity is perfectly balanced by its natural roundness.

Corvina, Rondinella, Dindarella, Croatina and other indigenous vines to complete.
Vineyard (geographical location and characteristics)
All the vineyards are located in the north-western part of the province of Verona. The average age is 30 years and reaches 50 years in some of the Dindarella vineyards. The soils are red and brown on marls of Cretaceous age and compact red soils on Eocene limestone.
Vinification
Vinification takes place in containers of up to 100 hl, with automatic pumping over to allow high extraction and minimum loss of grape quality. Maceration continues for about 15 days at a controlled temperature. Then, after some racking and natural clarification, the wine is partly transferred into special large oak barrels and the remaining 30% into new, medium-toasted French oak barriques. Finally, further ageing in the bottle for at least 6 months follows.
