Costella Sparkling White Wine

Obtained by slow white fermentation from grapes grown in our hillside vineyards. Straw yellow colour, intense aroma and persistent perlage.

Garganega, Trebbiano and Chardonnay.

Vineyard (geographical location and characteristics)

The vineyards have an average age of about 25 years. The hilly terrain is morainic and alluvial, of a calcareous, gravelly-sandy nature.

Vinification

The scrupulously selected grapes, harvested when ripe, are sent for vinification on arrival at the winery. Immediate soft pressing and crushing, with separation of the flower must so as not to lose freshness and the characteristics of green, unripe fruit aromas, yields the must, which is then subjected to controlled low-temperature fermentation. This is followed by a second fermentation for fizzing in steel at the end of the winter, the sudden lowering of temperature with the maintenance of a small natural residual sugar.

Costella & Cuisine

Excellent as an aperitif, it is also excellent with hors d’oeuvres and fish dishes.
