Cantinetta di Bacco DOC

Only the best vintages earn the honour of the Riserva Cantinetta di Bacco, an Amarone that is even more robust, full-bodied and warm precisely because of the special ageing that enhances the aromatic notes of jam, plum and liquorice, and the balanced, smooth taste.
Grape Variety
Corvina, Corvinone, Rondinella and other native or recommended vines to complement.
Vineyard (geographical location and characteristics)
The vineyards are located in the north-western part of the hilly arc of the province of Verona, in the historic Valpolicella area. The average age is 20 years and reaches 35 years in some Corvine. The soils are red and brown on marls of Cretaceous age and red compact soils on Eocene limestone.
Harvest (timing and methods)
At the beginning of October, after slight overripening. Harvesting is by hand, selecting the best bunches for subsequent drying.
Vinification
After careful drying, in early February the grapes are destemmed and softly crushed; the must and marc ferment for a long time. Then, after some racking, the wine is transferred into special large oak barrels for ageing, which lasts more than 5 years. After bottling, Amarone della Cantinetta di Bacco is aged for at least a year in the bottle in order to express the best of its characteristics when opened.
Amarone & Cuisine
A robust, full-bodied, warm wine that enhances the pleasure of roasts and game, from roast lamb to pork tenderloin, it excels with all hard cheeses and has no equal when sipped between happy conversations at the end of a meal. We recommend uncorking a few hours earlier or “oxygenating” with a decanter.
